Why Use Oak Wine Barrels?
Wine barrel maturation is the process in which the wine’s flavours integrate and mature. The winemaker’s choices during this ageing process, including the length of maturation and how much to engage in the process, will have a significant impact on the quality and character of the finished wine. Oak has a prevalent history in winemaking and despite technological advances, still retains an important role in premium winemaking.

- One of oak’s primary uses is to provide a depth of flavour to the wine. Inherent compounds such as vanilla, clove, spice, and char, add a layer of complexity to the flavour and taste.
- The porous nature of wood allows for oxygenation of the wine, in a gradual introduction that results in a smooth round finish.
- Oak barrels are the ideal environment for encouraging the metabolic changes that are necessary in winemaking, such as malolactic fermentation.
Natural oak tannins play an important role in the development of wine structure and maturation during the ageing process.
The type of oak and the toast levels have a significant impact on the finished wine tastes. The two primary oaks used in wine barrels are American oak and French oak. American oak imparts a stronger, sweeter flavour, including vanilla, coconut, and sweet spice. French oak, contrastingly, a more subtle flavour of cedar, tobacco, and savoury spices. Toasting also has a significant effect on the flavour profile of the wine. It amplifies the caramel flavour in American oak and the smokiness provided by French oak. Usually, the heavier the toast, the stronger the flavour it imparts will be.
